how mean! haha in another screen shot fromt he demo you can see this enemy fall off the brige with that kid on his back, so the kid'll die, except when you need to save him with link

The kid wasn't on the thing's back! Colin was tied to a pole on the boar the orc was riding! So when the orc-thing fell, Colin) stayed tied on the pole which was attached to the boar, which was still on the bridge.

No, it's not Ganon. If you look it from the side, you see it is fat and Ganon is muscular.

Firehexer you don't know what you're talking about. If you think that the Ganon form that you saw at the end of OOT is definitely Ganon, think again. In several other Zelda games he is indeed a fat (but muscular) pig.
